Delicious dishes made straight from the can boss Jose Andres Today's Matt Lauer shows how tasty, simple recipes for gazpacho, salad with tuna and cook more with canned goods. For the short period of time and money, canned food can save the day, when it comes to cooking a nutritious meal. Chef and restaurant manager Jose Andres from the Bazaar at the SLS Hotel in Beverly Hills shares his simple and tasty recipe for white asparagus gazpacho, chick peas and tuna salad and artichokes with clams and jamonSerrano. First up: chickpea and tuna salad ingredients for 2 Ingredients • 1 medium ripe plum tomatoes • 1 14-ounce can peeled cooked chickpeas, drained •, 5 ounces shallots, and chopped • 2 medium ripe plum tomatoes, cored and chopped • 1 Quarter green peppers, seeded and cut into small cubes • Half cucumber, peeled and cut into small pieces • sea salt • 2 tablespoons Spanish extra-virgin olive oil plus extra for garnish • 1 tablespoon sherry vinegar taste • 1 9.15-oz canatun claro (tuna packed in olive oil to create) DIRECTIONS grate a tomato with a tomato puree. Set aside. Place in a bowl, combine the chickpeas, scallions, tomatoes, peppers, cucumbers, olive oil and vinegar. Toss. Season with sea salt. Spread grated tomato on the base of each plate. Top with the mixture of chickpeas. Remove pieces of tuna from the can and place on top of salad. Drizzle with olive oil. .
